Popcorn Balls

April


1 c. sugar
1/3 c. corn syrup
1/3 c. water
1.4 c. oleo
3/4 t. salt
3/4 t. vanilla
3 qts. popped corn

Boil sugar, water, oleo and salt until it is a hard crack stage. Add vanilla and stir. Pour over popped corn. With buttered hands, form into balls.

About Dandelions:
Pick dandelions before the bud opens. Dandelions are plentiful of iron, copper, potassium, phosphorus, calcium, and vitamins A and C. Avoid areas where weed killers and fertilizers have been used.
 They are free and you won't starve.

Sweetened Condensed Milk

1 c. instant milk
2/3 c. powdered sugar
1/3 c. boiling water
3 T. oleo
1/2 t. vanilla

Melt oleo in boiling water. Combine milk and powdered sugar. Pour hot water into dry ingredients and blend until smooth. Add vanilla, stir, then chill. Use in your recipes calling for sweetened condensed milk.
Makes 1 1/4 cups.

Shrimp Appetizers

April 4, 1990


1 lb. large shrimp, peeled, deveined
1/4 c. oleo
1 c. fresh mushrooms, chopped
1/4 c. onion, chopped
1 1/2 t. garlic flakes or powder
1 1/2 t. chicken bouillon granules
1 1/4 c. soft bread crumbs
melted oleo
parsley flakes

Preheat oven to 400*. In a large skillet melt oleo, add mushrooms, onion, garlic and bouillon. cook until tender. Remove from heat and stir in crumbs. Set aside. Cut a slit along underside of each shrimp without cutting through. Remove vein and brush shrimp with oleo. Mound stuffing mix in a hollowed area of each piece. Place in a greased shallow baking dish. Bake 13 minutes. Sprinkle on parsley. Chill leftovers at once.

 It's 7 a.m. and my baby girls woke up singing, I love them my babies so much. This week we watched "The Wizard of Oz",. After it was over we went outside to make shapes with the clouds. A  jet went over leaving a white stream and Nancy had to be held and she was so scared. My baby was sure that was the wicked witch.
