Mom's Five Cup Salad

April


1 c. canned Mandarin oranges, drained
1 c. crushed pineapple
1 c. sour cream
1 c. coconut
1 c. miniature marshmallows

Combine and mix well. Chill before serving.

There is a secret to this delightful recipe. Mom instructed me not to add those extra few oranges or marshmallows just because you have some extra. It throws the balance of taste off. She was right.
She holds the record for the best Potato Salad for a get together and this is right behind it.
For your next event requiring a dish, try this! A little goes a long way and the presentation is beautiful.

Thanks Mom for teaching me to enjoy Lawrence Welk. I still watch him.

What A Crock!

April


1 can mushrooms,chopped
1 c. celery, chopped
1 onion, chopped
1/2 c. oleo
1 1/2 t. poultry seasoning
salt / pepper
2 c. chicken broth
1 16oz. box cornbread stuffing mix

In a skillet, saute mushrooms, mushrooms and onion in oleo until tender. Ass to stuffing mix in a large bowl. Add seasonings and broth, toss to mix. Pack tightly into a crock pot. Cover, cook on high one hour. Turn to low and cook thirty minutes.

This recipe is made on every holiday in my realm.

If children didn't ask questions, they would never know what grown ups know.

Barbecued Onions

April 20, 1990


1 medium onion, sliced
2 T. oil
3.4 c. BBQ sauce
3 T. vinegar
splash lemon juice

Saute onion in hot oil until just tender. Stir in remaining ingredients. Great on burgers!.

This is easy to fix at the campsite, like today on a hot Sunday.Got home in time to watch "Life Goes On."

We just had the best day ever! Wichita River Festival was so fun. We participated in Easter Seals, ate from the world's largest Pizza, put money in the world's largest piggy bank, danced in the middle of street, ate a new health food called frozen yogurt,  and sat on the curb and had our dinner.

Spinach Souffles

March 10, 1982


1 10oz. pkg. frozen chopped spinach, thawed, drained
1 c. cottage cheese
1/4 c. oleo
3 T. flour
3 eggs, beaten
1 1/2 t. salt
2 T. onion, chopped
dash dry mustard

Grease 6 muffin tins. Do not use paper liners. Preheat oven to 350*. Combine spinach, 1/2 cup of the cottage cheese, oleo, flour, eggs and seasonings. Divide equally into muffin tin. Top with remaining cottage cheese and bake 35 minutes or until puffy.

Those who cannot remember the past, will spend a lot of time looking for their cars in mall parking lots...

Dad's Famous Candied Yams

March 8, 1992


1 1/2 T. cornstarch
3/4 c. brown sugar, packed
1/4 t. salt
1/3 c. oleo
1 1/2 c. orange juice
1/4 c. pecan pieces, optional
2 1lb7oz. cans sweet potatoes, drained

Combine cornstarch, sugar, salt and oleo in a saucepan. Add orange juice and cook until thickened and clear. Arrange yams in a 1 1/2 qt. casserole. Sprinkle on pecans. Pour on sauce, cover, and bake 1 hour at 350*.

There are chapters in every life which are seldom heard and certainly not aloud.

Aunt Georgia D's. Green Beans

March


1 1lb4oz. pkg. frozen green beans
1 t. crushed marjoram
1 small can pearl onions, drained

Prepare frozen beans as directed, drain well.  Coarsely Chop the onions and add to beans and heat through.

How small is small? You know you're in a Kansas small town when:

1. Third street is on the edge of town.
2. You don't use your turn signal because everyone knows where you're going.
3. You are born on June 12th and your family receives gifts from the local merchant because you are the first
    baby of the year.
4. You speak to each dog you pass by name and he wags his tail.
5. You dial the wrong number and speak 15 minutes anyway.
6. You are run off Main Street by a combine
7. You can't walk for exercise because every car that passes offers you a ride.
8. You drive into a ditch outside of town and word reaches back before you do.
9. You write a check on the wrong bank and they cover it for you anyway.
10. You miss Sunday at church and receive a get well card.
11. The pick ups on Main Street outnumber the cars three to one.

Schmroodles

1 can cream of mushroom soup
3/4 c. milk
2 c. fresh grated Parmesan cheese or 1 c. grated/dry
3 c. hot cooked egg noodles
1/3 c. oleo, melted
salt / pepper

Combine in saucepan, soup, milk and cheese. Heat thoroughly. In a bowl combine noodles with oleo.
Add soup mixture and blend well. Serves 5.

What's for lunch? I said sandwiches and noodles, hmm not much interest. So I said "Sandwiches and Schrmoodles". They loved it:)

Baked Beans Deluxe

March 28, 1990


4 strips bacon
1/3 c. onion, chopped
1 16oz. can pork n' beans
1 15oz. can chili beans
1/2 c. catsup
1 T. brown sugar
2 T. maple flavored syrup

Fry bacon until crispy curled. Drain fat except 1 T. Saute onions in fat 1 minute. Combine onions and remaining ingredients in a 2 qt.casserole. Bake 30 minutes at 375* or until bubbly. Makes 6 cups.

We had this at our picnic today, wore ourselves out and now watching "Roseanne."

Sugar Beets

February

4 T. oleo
2 T. sugar
2 1# can sliced beets, drained

In skillet, melt oleo, stir in sugar. Add beets. Heat through until beets are glazed. Serves 6.

If you boil some eggs, peel and let them soak in the beet juice, then slice. Kids love this!

Debbie's granddaughter, 2011, Coraline
Pneumonia is something terrible to suffer through and I did have to stay in the hospital for four days and I was pregnant with my second child. My doctor advised me to get an abortion because my baby might have poor lungs. That was in 1974. It is now 1977 and Debbie has excellent lungs. and healthy. We are so blessed.

Barbecued Cow Chips

February


4 potatoes, unpeeled
3/4 c. catsup
1 T. dark corn syrup
1/t. paprika
1 t. salt
1/4 t. bbq spice

Slice clean potatoes to 1/2" slices. Place chips on a greased pan. Combine remaining ingredients and brush on chips. Bake 1 hour at 425* or until done. Serves 6

Hot Pot Salad

February 5, 1985


4 c. potatoes, cooked, peeled, cubed
1/4 c. celery, chopped
1/c. green onions
8 strips bacon, crispy fried
1/3 c. Italian dressing
1/2 c. grated Parmesan cheese

Combine ingredients except cheese. Cook over lo heat, stirring occasionally, 3 minutes. Remove from heat and add cheese. Serves 5

To keep potatoes from sprouting during storage, toss a few apples in the storage area.

 This week end I took you shopping and you each wanted Play-doh kits.
We went to April Dawn's birthday party and Jody won the game "Musical Magazines." Boy, that was a rowdy party.
 You are now asleep. Every Sunday evening we listen to the radio special The Hall of Fame" and sing and clean house.

Fruity Slaw

February 2, 1995


1 qt. finely diced green cabbage
1/4 c. raisins
1 small can mandarin oranges, drained
2 T. instant minced onions
1/2 c. mayonnaise
1/2 c. sour cream
1/2 t. salt

Combine and chill. Serves 6

Now that is fast! Between watching the OJ trial and Gula Gula Island, washing dishes, doing laundry.whew!

 It's mid morning and you're all being so good. I stayed up late and cleaned house real good.
Jody keeps touching my back with a cold apple, Debbie ate a huge breakfast and Nancy is playing quietly.
Won't be long before we head back to our beloved Mayberry Park. (West Douglas)

Baked Spinach

February


1 10oz. pkg. frozen spinach
1 T. oleo
1/2 c. celery, diced
1/2 c. onion, chopped
1/2 c. bread crumbs
salt / pepper
1 egg, slightly beaten
1/2 c. sour cream
1/3 c. cheddar cheese, grated

Cook spinach as directed, drain well and set aside. Melt oleo in skillet, add celery and onions, cooking until tender. Add bread crumbs, salt, pepper, egg and sour cream to skillet. Mix well. Place in a greased casserole. Top with cheese. Bake 10 minutes at 375*. Serves 5

This has been a delightful lazy day. We sat around and did nothing other than bake a cherry pie together and this casserole and watched it snow all day. You girls drug out Christmas toys and played your hearts out.
