1 10oz. pkg. frozen spinach
1 T. oleo
1/2 c. celery, diced
1/2 c. onion, chopped
1/2 c. bread crumbs
salt / pepper
1 egg, slightly beaten
1/2 c. sour cream
1/3 c. cheddar cheese, grated
Cook spinach as directed, drain well and set aside. Melt oleo in skillet, add celery and onions, cooking until tender. Add bread crumbs, salt, pepper, egg and sour cream to skillet. Mix well. Place in a greased casserole. Top with cheese. Bake 10 minutes at 375*. Serves 5
An excerpt from my diary, February, 16, 1977, Thursday
This has been a delightful lazy day. We sat around and did nothing other than bake a cherry pie together and this casserole and watched it snow all day. You girls drug out Christmas toys and played your hearts out.
