I dedicate this recipe to the memory of Fess Parker and his role of Daniel Bone and to the cast.
1 5lb. round bone pot roast
2 1/2 t. salt
2 T. shortening
1/2 c. barbecue sauce
1/2 c. apple cider
8 carrots, peeled and cut into thick coins
6 potatoes, peeled and quartered
1 onion, sliced thin
1 10oz. pkg. frozen okra
1 1lb. can tomatoes, undrained chopped
Rub meat with salt. In a dutch oven, melt shortening. Add meat. Using medium heat, brow, turning only once. Reduce heat, add bbq sauce and apple cider. Cover and simmer 4 hours. Add veggies and simmer 1 1/2 hours.
The key to everything is patience. You get the chicken by hatching it, not by smashing it...Arnold Glasgow
