Salmon Betty

February 24, 1994


3 c. soft bread crumbs
1/2 c. oleo, melted
1 lb.can salmon
1/2 t. salt
1/3 t. tarragon
1/2 t. lemon peel
1/2 c. chicken broth
1 c. cheddar cheese, shredded

Mix crumbs with oleo. Cover bottom on a 1 1/2 qt. baking dish with half the crumbs. Drain liquid from salmon over crumbs. Flake salmon and spread half of it over crumbs. Sprinkle on other half of crumbs .Repeat. Add chicken broth, top with cheese. Bake at 359* for 40 minutes. Serves 4.

Today was 40* and the sun has been clapping its rays all day. I'm watching a tv show called :"Hard Copy".

My little daughter Debbie was sick all night but woke up just fine. You enjoy our walks and it seems you always found something of value.
