Baked Bass

April


6 T. oil
1 clove garlic
1 3lb. bass, with head
1 lemon, sliced
1/4 c. lemon juice
salt / pepper

In a 13" x 9" x 2" pan, add oil and place garlic in the middle. Heat in oven at 375* for 5 minutes, discard garlic. Leave head on bass until done. Turn bass in oil to coat. Place lemon in cavity. Sprinkle with lemon juice and salt and pepper. Bake 45 minutes or until flaky. Discard head.
